Job description
Responsibilities
- Provides direct supervision and leadership to the main kitchen staff including holding the staff accountable for punctuality, dress code, food safety, food quality, food portion controls, customer service, and overall performance.
- Acts as production manager of food services. Will ensure all daily production needs from the kitchen are met in proper quality and quantity.
- Manages (and sets) the Meals on Wheels pars including frozen, perishable and shelf stable meals. Ensures that the main kitchen staff is properly labeling, stocking and rotating this inventory as needed.
- Will assist in the planning and execution of internal and external catered events; often including working these engagements at the discretion of the Food Services Manager.
- Will be responsible for analyzing and ordering inventory of food to include: dry goods, paper goods, cleaning supplies, frozen foods, and perishables.
- Will assist in developing, designing, and executing new menus and standardizing recipes needed to support those menus
- Will ensure the Head Cook and Cooks’ fidelity to the standardized recipes and approved menus.
- Maintaining food production records to include: temperature logs, head counts, food safety audit forms, etc.
- Will assist the Director of Food Services in hiring, training and the evaluation process for all kitchen employees.
- Will review Food Service (head cooks, cooks) payroll for accuracy and acumen. Will develop a weekly work schedule, and help plan and approve staff’s scheduled and unscheduled time-off requests.
